Crepes, they’re so easy & gluten free!
Crepes are incredibly easy to make and you can fill them with almost anything. From sweet to savory, crepes are perfect for every meal. There are no special pans or cooking utensils needed, just follow the steps below.
the basic recipe (to make 8 large crepes I triple the following):
Gluten/Wheat Free, Kid Friendly, Dairy Free (option), Vegetarian
1 egg
1/2 scant cup Bob's Red Mill Gluten Free All Baking Purpose Flour*
1/2 cup milk (or milk alternative)
1/4 teaspoon salt
1/2 tsp oil
Blend all ingredients together, making sure there are no lumps.
Use a large frying pan on low to medium heat (if using almond or coconut milk place place pan on medium-high heat). Coat pan well with butter (or butter substitute, but not oil or cooking spray), ladle in some batter. Pick up the pan off the burner and rotate so the batter creates a thin layer on bottom of pan. Cook for a few seconds, top will look dry and bottom will begin to look golden. Flip and cook for a few seconds more.
Flip onto plate and fill with fruit, jelly, nutella, chicken with mushrooms and asparagus, ham and cheese, crab with a lemon cream sauce, etc.
*I have tried all sorts of mixes and mixtures of flour, but this is simply the best with the yummiest results.
