Gluten Free Chocolate Popovers
Popovers are good, but add a bit of chocolate to get a heavenly taste! Just make sure you blend all the ingredients (sans the chocolate) to make a smooth texture, you do not want any unpleasant lumps ruining these yummy treats.
Gluten/Wheat Free, Vegetarian, Kid Friendly
ingredients
Wet Ingredients:
1 1/4 cups milk
4 eggs
3 tablespoons butter, melted
Dry Ingredients:
1 cup gluten free flour mix (1/4 cup each tapioca, white rice, 1/4 brown rice, 1/4 potato starch)
1/4 teaspoon xanthan gum
1/4 teaspoon salt
small chunks of chocolate or chocolate chips
preparation
Preheat oven to 400 degrees. Blend the wet ingredients and dry ingredients (except chocolate) in separate bowls. Once well mixed, combine the two together until very smooth. Evenly distribute mixture into a well greased muffin tin (makes 11-12). Right before baking place just under 1 tablespoon of chocolate in the middle of each battered filled cup. Bake for 25 minutes then reduce temperature to 350 degrees and bake 10 minutes more. Remove from the oven and let them rest in the pan for 5 minutes before turning them out onto a plate to eat.
