Carrot Latkes

Gluten Free & Paleo Latkes

5 cups shredded carrot
5 scallions chopped
4 eggs, lightly beaten
4 tablespoons flaxseed meal
pinch sea salt
coconut oil for frying

Mix all ingredients leaving the oil for frying. Using an ice cream scoop spoon into hot pan with oil. Gently press down with the back of the spoon to flatten. Cook a couple of minutes then flip. Serve warm with favorite toppings like apple sauce or as a side.
