Tacos are almost a no brainer for camping. They are so easy and can fill a hardy appetite that brought on by so much fresh air. The one thing that I recommend to put your standard taco over the top: fire roasted poblano peppers. My mouth is watering just thinking about them.

Jackson, WY (Day 13)
I love Jackson and could live here. Seriously, I can actually survive here because of all the gluten free choices. Two that I really want to mention are The Jackson Whole Grocer and Thai Me Up.
The Jackson Whole Grocer is a wonderful food market where the produce is delicious, the [...]
Yellowstone National Park (Day 12)
We spied all sorts of wild critters around Yellowstone. It all was quite amazing, the one exception – the food. We only tried a couple restaurants around Grant Village, but were disappointed by everything food related. Service, food, flavor, and prices were all lacking in every way. Even the scrambled [...]

We can still enjoy a campfire favorite, just try this little twist to make them taste fabulous…(come on, if you’ve been keeping tabs on my road trip blogs you know what I am going to say) [...]
Jewel Cave, SD (Day 9)
Today we had time (and no thunderstorm) to cook dinner at the campsite. Hurray! On the menu: Sweet & Sour Chicken. Who said camping had to be just hot dogs? Seriously, why limit yourself?
This recipe is one I make at home on the BBQ, but find it is [...]
Mt. Rushmore (Day 8)
This campfire breakfast of peach crumble brought on cheers from every member of my family and strange looks from our curious neighbors.
I feel sorry for startling other campers and even worse that they were all slaving away cooking their breakfasts. I try to pack light and leave the kitchen sink [...]
South Dakota (Day 7)
Stop everything you are doing and head straight to your nearest Original Pancake House for the yummiest gluten free pancakes ever (they also have crepes, omletes and etc).
My hubby was slightly irritated at driving 30 minutes off route for breakfast, until he took a bite. Our Sioux Falls’ detour [...]
